No offense to Iowans, who are fanatical about their pork tenderloin sandwiches, but the dish’s best iteration is found in Indiana.
The legendary pork tenderloin at Nick’s Kitchen, which invented the sandwich back in 1908, is pounded flat, marinated in buttermilk for 24 hours and dredged in cracker crumbs, before being deep-fried and plopped onto a too-small bun. The restaurant’s owner says their secret is using the loin’s center cut, but it’s not just the tenderness of the meat that elevates the sandwich: It’s the tang of the buttermilk and the crunch of the breading. Iowans, the quickest route to Nick’s is I-80.
